What to do with Labor Day Weekend Leftovers?




Smoked Brisket, Bacon, Italian Sausages 

It is no secret that we love our football in Texas.  It is also no secret that we love throwing any type of meat we can get our hands on in a smoker.  What happens when the first weekend of college football meets cooler temps and Labor Day?  At my house it happens to be copious amounts of leftovers.  My challenge, use those various smoked meats to create an elegant meal that does not resemble a roadside BBQ joint.
Ground Brisket, Sausage, Carrot &  Spinach
Stuffed Manicotti
Bruschetta with Arugula, Artichoke & Smoked Bacon
Roasted Acorn Squash with Soy Ginger Sauce
